Peanut, Peanut Butter and Jelly!

Okay, those of you who know me know that I LOVE peanut butter. I could probably eat a peanut butter sandwich for lunch every day. What can I say? I’m a kid at heart. Unfortunately, Nathan gets PB & J for lunch a lot too. Not that it’s a bad thing. Especially with homemade strawberry jam . . .  mmmmm . . . . sorry. I digress. Anyway, I want to lose weight, and I hate feeding him a peanut butter sandwich every single day. I’m not looking for a total lifestyle makeover, but I’m wondering—does anyone have any delicious, kid-friendly lunch ideas? Nathan and I would love some variety.

You could try almond butter. It is yummy and healthier than peanut butter.

I bought shells and cheese with wheat noodles and Cam loves those. We sometimes do grilled cheese or a quesadilla.I even cook an egg, not scrambled but break the yolk, with a little bit of cheese on top, and lay it over a piece of bread. I struggle too trying to have fun, different things to eat each day.

We do a lot of grilled cheese sandwiches here, as well as hot dogs, mac n'cheese (one of Leo's faves). There are also quesadillas, just cheese in a tortilla. They love them. We also put turkey in them sometimes. :)

I have a hard time feeding myself during the day. However, if I'm really trying to be healthy, dinner leftovers seem to be the best and easiest way to get veggies at lunch. Or soup. Make a soup loaded with vegetables and eat that for lunch for a week.

Cottage cheese. Miles really likes it and it is a good dairy protein. Mix in peaches (even canned)and it's delicious.

Brown Rice and Quinoa...Campbell eats it with peas or any other veggie I pull from the frezzer, or just left overs on top.
A friend taught me to always keep frozen peas in my freezer and when in doubt pull them out...and Campbell loves 'em.
